Creamy Herb Cheese Cucumber Bites

Ingredients:

  • 2 large cucumbers
  • 1 cup cream cheese (softened)
  • 2–3 tbsp sour cream or Greek yogurt
  • 1 tbsp fresh dill (chopped)
  • 1 tbsp fresh parsley or chives (chopped)
  • 1 tbsp capers (optional, finely chopped)
  • 1 small garlic clove (minced)
  • Salt & black pepper to taste
  • A squeeze of lemon juice (optional)

Instructions:

  1. Slice the cucumbers into thick rounds (about 1–1.5 cm thick).
  2. In a bowl, mix the cream cheese, sour cream (or yogurt), garlic, herbs, capers, salt, pepper, and lemon juice until smooth and creamy.
  3. Spoon or spread the mixture onto each cucumber slice.
  4. Arrange on a plate and chill for 10–15 minutes before serving (optional but refreshing).

Tips:

  • Add a sprinkle of paprika or chili flakes for a little kick.
  • You can swap cream cheese with ricotta for a lighter version.
  • Best served fresh and cold as a quick appetizer or snack.
