Ingredients:
- 2 large cucumbers
- 1 cup cream cheese (softened)
- 2–3 tbsp sour cream or Greek yogurt
- 1 tbsp fresh dill (chopped)
- 1 tbsp fresh parsley or chives (chopped)
- 1 tbsp capers (optional, finely chopped)
- 1 small garlic clove (minced)
- Salt & black pepper to taste
- A squeeze of lemon juice (optional)
Instructions:
- Slice the cucumbers into thick rounds (about 1–1.5 cm thick).
- In a bowl, mix the cream cheese, sour cream (or yogurt), garlic, herbs, capers, salt, pepper, and lemon juice until smooth and creamy.
- Spoon or spread the mixture onto each cucumber slice.
- Arrange on a plate and chill for 10–15 minutes before serving (optional but refreshing).
Tips:
- Add a sprinkle of paprika or chili flakes for a little kick.
- You can swap cream cheese with ricotta for a lighter version.
- Best served fresh and cold as a quick appetizer or snack.
