Crispy Fried Green Tomatoes

Crispy Fried Green Tomatoes

Ingredients

  • 4 large green tomatoes
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup flour
  • 2 eggs
  • 2 tbsp milk
  • 1 cup fine breadcrumbs or cornmeal
  • ½ cup grated Parmesan (optional)
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Oil for frying

For serving (optional)

  • Garlic yogurt sauce
    or
  • Spicy mayo
    or
  • Fresh herb dip

Method

1) Slice the tomatoes

Wash the green tomatoes and cut them into slices about 1 cm thick. Pat dry with paper towels.

2) Season

Sprinkle with:

  • salt
  • black pepper

Leave for 10 minutes, then gently pat dry again. This removes extra moisture and helps them stay crisp.

3) Prepare coating stations

Bowl 1: flour
Bowl 2: eggs + milk (whisked)
Bowl 3: breadcrumbs/cornmeal + paprika + garlic powder + Parmesan

4) Coat

Dip each slice:

  1. Flour
  2. Egg mixture
  3. Breadcrumb mixture

Press lightly so coating sticks well.

5) Fry

Heat oil in a pan over medium heat. Fry slices 2–3 minutes per side until golden brown and crisp.

Place on paper towels to drain excess oil.

6) Serve

Best served hot and crunchy with dipping sauce.

Tips

✔ Use firm green tomatoes (not ripe red ones)
✔ Cornmeal gives extra crunch
✔ Add chili flakes for heat
✔ Can be baked at 200°C for 20–25 minutes for a lighter version
